Nowadays, when your mobile operator "sells" you a mobile phone, it is often locked on its network, for example if you buy an used phone to somebody who bought it in a prepaid phone pack from Vodafone, it won't work on the Orange network, accepting only the Vodafone SIM cards. However, if you go to a foreign country, you will maybe want to buy a local prepaid card, or another subscription to a local mobile Operator. The unlocking of your mobile is then necessary.

This operation allows your mobile to remove this restriction on a specific operator, and then to accept all the SIM cards worldwide ! This can be very usefull, if you've got two subscriptions, or when you lend or resell your mobile phone, or simply to feel yourself free !
